Once again, I'm with Polar Pilot on this one. The rider safety course is awesome. While you're waiting for your course date, read these two books (they have the best answers to your original question):
"Proficient Motorcycling," Hough
"The Complete Idiot's Guide to Motorcycles" (lame name, but good reading), Darwin Holmstrom.
I'm sure there are other rider safety books out there, so check your local library.
My answer to the original question about wind buffeting: be prepared to lean the bike harder against the direction of the wind. You may even have to counter-steer the bars a bit. You will ususally have to wait until the wind gets to you before making these moves.
I'm no riding instructor, but this seems to work for me. Also, I avoid trucks if at all possible. I slow down or speed up to get them away from me.
One more note, I took the rider safety course and still had a small accident. You can read about it at my website. It is not a guarantee that you will not have an incident. That was my problem, I thought statistics would save me and I got cocky. The course just makes you aware of what could happen and how to reflect on your screw-ups.
